You’ve also explored the topic with more intellectual curiosity than any of my former dietitian colleagues or for that matter most of the food scientists I’ve had the privilege to engage with.
I’ll add a complication to the development of a definition here in America. We have a particularity strong nutrient-focused approach to dietary advice in general and specifically to food labeling restrictions . It’s only recently that the experts even gave lip service to food as opposed to nutrients in the context of dietary guidelines. And it’s only in 2024 that the FDA identified the inclusion of food groups as a required component for using the word “healthy” on food product labels.
I too don’t hold out much hope for Trump administration producing a definition of UPF that doesn’t benefit the industry.
